Ingredients
Caramel topping
- 1/4 cup half-and-half
- 1 tablespoon cannabutter
- 12 caramels, unwrapped
- 1/2 teaspoon salt
Batter
- 10 Tbsp cannabutter, melted
- 2 eggs
- 3/4 cup sugar
- 1/4 cup light brown sugar, packed
- 1 Tbsp vanilla extract
- 2 Tbsp brewed coffee (optional)
- 3/4 cups + 2 Tbsp unsweetened cocoa powder
- 1/4 tsp salt
- 1/2 cup all-purpose flour
- 1 cup mini pretzels or crushed pretzels

Note: Before starting this recipe, convert the number of tablespoons of butter needed into grams (multiply by 14). If you fall short on cannabutter, suppliment with regular unsalted butter.

Caramel topping
Step oneIn a medium saucepan, combine 1/4 cup half and half, 1 tablespoon of cannabutter, and heat over medium-low heat to melt cannabutter until mixture is simmering, stirring frequently.
Step twoAdd the 12 caramels, 1/2 teaspoon salt, and stir frequently until melted. Take pan off the heat; set aside while preparing the brownie batter.

Batter
Step onePreheat oven to 350 degrees. Line an 8-by-8-inch baking pan with aluminum foil leaving overhang on the sides, spray with cooking spray; set aside.
Step twoIn a large, microwave-safe bowl, add the 10 tablespoons of cannabutter and heat on high power to melt, about 1 minute. Allow cannabutter to cool momentarily so you don’t scramble the eggs.
Step threeAdd the 2 eggs, sugars (3/4 cup granulated sugar and 1/4 cup light brown sugar), optional 2 tablespoons of coffee, 1 tablespoon vanilla extract, and whisk to combine.
Step fourAdd the 3/4 cups + 2 tablespoons of cocoa powder and 1/4 teaspoon salt, whisk to combine. If your cocoa powder is lumpy, it could take a couple minutes of vigorous whisking.
Step fiveAdd the 1/2 cup flour and stir until just combined
Step sixTurn batter out into prepared pan, smoothing it lightly with a spatula or knife. The batter is very thick and fudgy so take your time to work it into the corners of the pan.
Step sevenAdd the 1 cup of pretzels in an even, flat layer over the brownie batter.
Step eightDrizzle the caramel sauce over the top in an even zigzag pattern. The entire surface of the pan won’t be completely covered in caramel sauce, but while baking, the sauce thins out, melts, and ultimately covers the whole pan.
Step nineBake for about 26 to 28 minutes, or until done; don’t overbake. A toothpick inserted in the center should come out mostly clean, but will likely have a few moist crumbs, but no batter. The caramel sauce will never ‘set up’ so make sure to examine the brownie portion, not the caramel portion, when glancing at your toothpick.
Step tenAllow brownies to rest for at least 1 hour or overnight.
